Saturday, Mashed Potato.

MAN and I were discussing on what to eat for today’s dinner last night. I suggested western dishes since I never really make any western dish before unless you considering sunny side up fried egg a western one. I eagerly searching on the web to get the recipe for mashed potato. I planned to pan sear marinated chicken breast and top with barbecue sauce, with mashed potato and fresh tomato plus some fresh vege perhaps.

This morning, MAN woke up and got ready to go to work, I was lying on the bed and looked at him with sleepy eyes, MAN said he have sore throat, may be we just eat something soupy tonight, I suggested congee, so yeah, congee for dinner. Minced meat with conpoy congee.

But, I was so excited about trying to make mashed potato, therefore, mashed potato for my lunch.

Ingredients for 1 serving:

  • 1 Potato (Not sure whether it’s Yukon Gold potato as suggested, as all potatoes look alike to me)
  • Fresh Milk
  • A pinch of salt
  • 2 thin slices of luncheon meat, cut into strips, you can use bacon or ham.

Pour peeled and diced potatoes into boiling water. Try to poke the potato with fork after some time, if can get through means it’s ready. Drained it and place all the potatoes in a bowl. Mash it using fork or spoon or both. Add in a pinch of salt then pour in the milk that is about to cover half of the mashed potato, mix it and blend it with spoon. Add in more milk until the texture is fluffy or until you think it looks like mashed potato.

Pan fried luncheon meat until golden color, sprinkle it on top of mashed potato. And done.

The heptagon plate make it looks like a dish from some one skillful. Wahaha.

    yeah! it certainly looks good!!

    Tip: For a richer version, can add some cheese shavings. Another variation, can add chopped up herbs.

    Haha.. I will try next time. But those ingredients are not easy to get over here. :P

    But it’s not available at the local supermarket near my place, need to go Jusco or Ole to get.
